Deboning device for pork shoulders

The shoulder deboning machine is made of stainless steel. The operator puts the machine “head” between the long bone and the shoulder blade after having cut the ligament and displayed the articulate. While he’s holding the left handle, he pulls the trigger on with the right hand causing the shoulder blade separation. The shoulder has to be positioned protruding from the conveyor belt to guarantee a working angle that avoids meat laceration. The shoulder blade separation can be complete or till the lower cartilage, it depends from the piece dimensions.
